How It Works
- Formula: Water Temp = (DDT × Factors) - (Flour + Room + Preferment + Friction)
- Friction: Mixing generates heat. Hand mixing adds about 6°C (11°F), while machine mixing can add 8-12°C (15-22°F).
- Warning: Water above 50°C (122°F) can kill yeast. If the calculation is negative, use ice water.
